These are delicious and a healthier alternative to the classic enchilada. And you can easily add your choice of meat if you desire.
1 can black beans
1 can pinto beans
1 can corn
1 can diced green chillis
1 small red onion diced
1 red bell pepper diced
1/2c cilantro chopped
garlic cloves minced
1/2t cumin
black pepper to taste
approx 24oz enchilada sauce of choice (red or green)
12 oz jack cheese
12 whole wheat tortillas (I prefer the handmade ones at Trader Joes)
avocado and cilantro garnish
1. In a bowl mix together all the above ingredients for enchilada mixture. Put a small amount of cheese and sauce in as well.
2. Spread some sauce on the bottom of pan. Spoon mixture generously into tortillas and roll. Pour remaining sauce over entire pan and sprinkle remaining cheese. Makes approx 12 enchiladas.
3. Bake at 350 degrees for about 30 minutes, until sauce is bubbling.
4. Serve with avocado or guacamole and cilantro as a garnish.
